DESCRIPTION
ZDP-189 is one of the new generation of powder metallurgy high-speed tool steel produced by Hitachi Metals Co., Ltd., and is rated as one of the best steels for making high-end tableware by knife lovers. This steel contains 3% carbon, 20% chromium and has a very high hardness (Hrc.63-67).
The blade uses ZDP-189 (Hrc.66) as the steel core, sandwiched in soft stainless steel on both sides. Such a blade remains sharp for a very long time, its softer external layer makes it easier to sharpen, and it also protects the core steel from external factors. The handle is a comfortable octagonal sandalwood handle with a ox horn bolster at each end.
The Nakiri is a double beveled knife with a rectangular shape and a tall, thin blade. It's popular in Japan and is often used by home cooks to quickly and efficiently chop, slice, or shred vegetables and fruit.
