DESCRIPTION
The Classic Santoku 7" Hollow Edger has a thinner blade than traditional chef's knives, with a 14° edge and a gradual upward curve at the end to provide a straighter edge. The hollow edge contains evenly spaced vertical depressions between the blade and the food Forms small air pockets. These small air pockets gently push food away from the blade, reducing friction and resistance when slicing.
This knife is made of 67-layer VG10 damascus steel, with a very sharp edge, high hardness (HRC: 60), excellent edge retention, and light center balance. The handles of these knives are meticulously crafted from G10 compound, which is waterproof and beautifully textured. The smooth connection between the handle and the pillow helps prevent calluses from forming on the thumb and index finger.
