This Kiritsuke Knife has a tapered blade with a length and sharp edge perfect for slicing and dicing a variety of foods. Made of Japan Damascus VG-10 high carbon steel, both sides are covered with 33 layers of soft and hard stainless steel, which is wear-resistant and corrosion-resistant, and can achieve a sharp and durable 15° cutting edge. Features a consistently even and thin grind, clean blade finish and excellent attention to detail. The blade is paired with a traditional "wa-style" (octagonal) handle, made of burl wood, and each knife handle is unique.
