DESCRIPTION
This 8" Kiritsuke knife is precision forged from high carbon VG10 steel and the blade is hardened to Rockwell C59-60 degrees so it retains a sharper cutting edge longer than any other knife. Both sides of the main blade are covered with fine Damascus stainless steel patterns. The Kiritsuke Knife is known as a chef's knife in Japan for its top cutting performance and versatility. With its straighter edge, the Kiritsuke 8" Knife is ideal for slicing and pushing. Shred, dice, and slice easily. Excellent choice for cleaning and separating boneless proteins such as fish.
The traditional D-shaped handle is made of colored wood for a comfortable and balanced feel. Secured by a mosaic pin with red spacers and metal end caps.
